Ingredients

  • 3 tablespoons unsweetened cocoa powder
  • 2 tablespoons granulated sugar or coconut sugar
  • 1 large egg
  • 2 tablespoons milk dairy or non-dairy
  • 1 tablespoon melted butter or coconut oil
  • ¼ teaspoon vanilla extract
  • teaspoon fine sea salt
  • 1 tablespoon mini chocolate chips optional

Instructions

1. Prepare the Mug (30 seconds)

  • Select a microwave-safe mug that holds at least 12 ounces to prevent overflow. Lightly grease the interior with butter or cooking spray, ensuring even coverage on the bottom and sides.

2. Mix Dry Ingredients (30 seconds)

  • Add cocoa powder, sugar, and salt directly to your prepared mug. Whisk vigorously with a fork until completely combined and no cocoa clumps remain—the mixture should appear uniformly dark brown.

3. Create Wet Mixture (45 seconds)

  • Crack the egg into the mug and beat thoroughly until completely incorporated into the dry mixture. Add milk, melted butter, and vanilla extract, whisking until the batter is completely smooth and glossy. The consistency should resemble thick brownie batter.

4. Add Final Touches (15 seconds)

  • Fold in chocolate chips if using, distributing them evenly throughout the batter. Gently tap the mug on the counter to release any air bubbles and level the surface.

5. Microwave to Perfection (2-3 minutes)

  • Microwave on full power for 2 minutes and 30 seconds. The cake should rise significantly and the top should look set but still slightly moist. If needed, continue heating in 15-second intervals until a toothpick inserted in center comes out with just a few moist crumbs.

6. Cool and Serve (1-2 minutes)

  • Allow the mug cake to cool for 1-2 minutes before serving—it will be extremely hot. The cake will settle slightly as it cools, creating the perfect fudgy texture.
